Açaí Basil Seed Breakfast Jar (Easy Vegan/Sugar-free Recipe)

Açaí Basil Seed Breakfast Jar (Easy Vegan/Sugar-free Recipe)

This Açaí Basil Seed Breakfast Pot is a combinination of my two of my favourite breakfasts: an açaí bowl and a chia pudding (or basil seed pudding in this case). I love this breakfast combination because it’s packed with antioxidants, plant-protein, fibre, complex carbs and healthy fats, and of course it tastes delicious!

Chia seeds and basil seeds are very similar in both form and taste. They’re both hydrophilic seeds which means they’re able to rapidly absorb a large amount of water in a short time. But basil seeds have a slightly different nutrient profile than chia and for that reason are my go-to.

Basil seeds come from the holy basil plant and like chia seeds are considered to be a super food which means they deliver the maximum amount of nutrients with a minimum number of calories. They’re a great source of plant protein and are rich in omega 3 fatty acids which support heart health, healthy skin, hair, and nails. Basil seeds are high in fibre which is essential for healthy digestion and preventing blood sugar spikes. They’re a good source of iron, calcium, magnesium and vitamin K and have more potassium per serve than bananas!

These magickal little seeds are also rich in antioxidants (flavanoids and polyphenols) which give them some amazing anti-inflammatory properties. But my favourite thing about basil seeds is the unique combination of antioxidants, amino acids, vitamins and minerals that is thought to help stimulate collagen production in the skin so they keep your skin glowing from the inside out.

Basil Seed Acai Breakfast Pot - Swoon Food recipe

The other component to this breakfast jar is Açaí. I’ve talked about the amazing Açaí berry in this post How to Make a Low Sugar Super Antioxidant Açaí bowl. But to sum it up, açaí berries contain very little sugar and are absolutely packed with antioxidants. Antioxidants slow down the ageing process, lower cholesterol levels, improve circulation and help prevent disease.

To complete this super powered breakfast, top with a spoonful of your favourite yoghurt to add a serving of probiotics and sprinkle over some crunchy granola for a truly satisfying breakfast.

Açaí Basil Seed Breakfast Pot

Serves: 2
Prep time: 10 minutes

2 Tbsp basil seeds (or chia seeds)
1 cup plant milk
1 tsp vanilla extract or 1/4 tsp vanilla powder
2 packets/serves frozen Açaí
1/2 cup frozen mango
1/2 cup frozen blueberries
1/2 cup frozen raspberries
1 cup/250ml coconut water

To serve:
Coconut yoghurt
Crunchy granola

Make the basil seed pudding first by combing the seeds in a small bowl with the plant milk and vanilla. Optional to add a little sweetener such as pure maple syrup or honey. Stir well and set aside to allow to seeds to absorb the liquid.

Next make the açaí layer. Soften the frozen açaí first by placing the packets under hot tap or in a bowl of warm water until you can easily break the blocks into pieces. Removce from packets and combine with the mango, blueberries, raspberries and coconut water in a blender and blend until smooth.

Layer up your jars or serving bowls with the açaí and basil seed pudding, and top them off with a dollop of coconut yoghurt and sprinkle of crunchy granola and enjoy!

You can make these breakfast jars ahead of time as they will keep in. the fridge for a day or two, just leave the granola off until serving so that it stays nice and crunchy.

White Bean & Miso Vegetable Soup (Easy Vegan Recipe)

White Bean & Miso Vegetable Soup (Easy Vegan Recipe)

Continuing with my winter soup theme of late, this White Bean & Miso Vegetable Soup is so quick and easy to make and is packed full of amazing umami flavour. It really is winter wellness in a bowl as it’s packed full of plant-based protein, fibre, antioxidants, phytonutrients, vitamins and warming anti-inflammatory spices.

I find myself gravitating towards soup recipes in winter more and more these days because they’re so quick and easy to make and they’re super nutritious and hydrating. When the weather is colder it can be easy to forget to keep up your water intake, so adding a bowl of soup to your day is one good way to help with that. Soups are also naturally sugar and oil free and this recipe is also gluten and dairy free/vegan too.

Serve this flavoursome soup with shredded of nori strips, a sprinkle of hemps seeds and salt & pepper to your taste.

This green goddess soup is one of the easiest ways to give your body a nutritious boost and get it glowing from the inside out! It’s packed full of antioxidants, phytonutrients, fibre, vitamins and minerals, and most importantly, it tastes delicious. I’ve tried a lot of green soups that taste like grass clippings and I assure you this recipe is not one of them. The addition of sweet potato balances out the green flavours and gives this soup a lovely full texture.

Speedy green goddess soup can be whipped up in just 20 minutes, making it the perfect recipe when you’re short on time or just want something quick and easy that your body will thank you for.

Feel free to swap or add in any other green vegetables of your liking and make this soup your own. To ensure you get a lovely green colour just be sure to add your soft leafy greens like spinach and parsley right at the end just before you blend it. You can boost the protein content by adding a can of white beans while the soup is simmering which will also bring a delicious creaminess. If you like your soup to have a bit of texture simply keep the blending to a minimum, alternatively, if you’re a super smooth kind of soup person go to town with the blending.

Serve this soup with a sprinkling of crunchy seeds and a side of crusty sourdough. Enjoy!

Wild Blueberry Quinoa Breakfast Cookies ~ Easy GF/Vegan Recipe

These amazing wild blueberry and quinoa breakfast cookies are quite the revelation! Who would have thought cooked quinoa would work in a cookie, yet it makes the perfect base for these healthy protein packed cookies. Despite their appearance, these cookies have a lovely soft texture and are not overly sweet making them a great way to start the day. Bake up a batch at the start of the week so that you’re sorted for a quick, healthy breakfast option or whenever you need a delicious healthy snack on the go.

I created these cookies to celebrate NZ organic week using Ceres Organics amazing organic ingredients. The ingredients list is short and made up of simple, whole food ingredients. Quinoa, almonds, tahini, pumpkin seeds, hemp and chia seeds provide the plant-based protein. Wild blueberries add a subtle blueberry flavour and are bursting with antioxidants. Cinnamon and ginger are beautiful anti-inflammatory spices that add a touch of warmth, and a small amount of pure maple syrup brings the sweetness which means they’re refined sugar free and low GI.

This cookie recipe couldn’t be easier to make. Simply stir all the dry ingredients together, add the wet ingredients, shape into cookies and bake. The hardest part is not eating all the mixture before it reaches the oven!
